Wagyu explained

Fullblood, purebred and F1 Wagyu, explained.

A plain-English guide to the Wagyu grades, what they mean for you as a buyer, and how to read the breeding values behind the cattle.

The Wagyu grades

Fullblood Wagyu trace 100% back to the original Japanese genetics, with no other breed ever introduced. Purebred Wagyu are high-content Wagyu recognised by the Australian Wagyu Association, bred up over generations so the herd is, for all practical purposes, Wagyu. F1 Wagyu are a first cross, usually a Wagyu bull over another breed such as Angus, and are the common starting point for a commercial Wagyu program.

Each grade has its place. Fullblood and purebred genetics are where the marbling and consistency are built; F1 and higher crosses are how that quality flows through to commercial herds and, eventually, the plate.

What we breed

Butler Grazing runs a purebred Wagyu herd, and we are breeding towards a polled (hornless) herd for easier, lower-stress handling. Our cattle are grown on grass north of Gin Gin and backgrounded in our own feedlot, so the genetics we sell are proven in the same conditions our buyers run them in. Individual animals may carry a fullblood record even within a purebred herd, so each animal on the site lists its own grade.

How to read EBVs

EBVs (Estimated Breeding Values) are a genetic report card. Each one estimates how an animal's progeny should perform for a single trait, such as marbling, growth or milk, compared to the breed average. For most traits, higher is better. Because they strip out the effects of feed and season, EBVs let you compare animals on genetic merit rather than just how they look on the day.

A few we record: Marble Score (the trait Wagyu is prized for), Eye Muscle Area and Carcase Weight (yield and size), and growth figures such as 400 and 600-Day Weight. Every sire on our Sires page lists its key EBVs, with a link through to the full profile on AWA Helical.

What this means for you

If you are building a stud herd, purebred bulls and females let you keep breeding up while holding quality. If you are running a commercial program, purebred Wagyu genetics over your existing cows are a proven way to lift marbling and value. Either way, buy on records as well as looks, and ask questions, we are happy to talk it through.
